Sweet Potato Pancakes & Egg White Omelet

Ingredients:


  • 3 ounces of Baked/steamed Sweet Potato

  • ½ scoop Protein powder (macros will vary based on protein brand)

  • ½ TSP of Baking powder

  • 2 ounces of Egg whites

  • 1 cup of Spinach


Method:


For Pancakes

1.   Cook the sweet potatoes

i)    bake at 400F for 50 mins or you could microwave for 3-4 mins

2.   Peel the sweet potatoes and mash with a fork

3.   Combine all ingredients into a blender and blend until smooth

i)    You can also mix by hand if you don’t have a blender, you will just end up with a chunkier consistency.

4.   Spray a skillet with non stick spray and heat over low medium heat

5.   Use a spoon and spoon out batter into the pan

6.   Cook for 3-4 mins on each side

For Omelet

1.   In a skillet over medium heat, add egg whites and spinach.  Cook until egg whites are no longer translucent.

*You can season your cakes with cinnamon to make them sweet and top with SF syrup OR you can make the savory with garlic and pepper!  Have fun and play with flavors!*
