Strawberry Banana Oatmeal Greek Yogurt Pancakes

Ingredients:


  • 1/4 cups old-fashioned oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 medium ripe banana
  • 1/2 cup 0% fage yogurt
  • 1/4 cup Unsweetened Vanilla Almond Milk
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup diced strawberries

Method:


  1. Preheat medium size skillet and spray with nonstick cooking spray.
  2. Add all ingredients except strawberries to a blender and blend on high until well combined and smooth.
  3. Unplug the blender and gently fold in strawberries with a spatula.
  4. Pour batter into the medium skillet, and cook each pancake begins to bubble around the sides
  5. Recipe makes 2 large Belgian pancakes.
  6. Top with greek yogurt, and any remaining fruit.
